Muffin Tray Sizes: Mini, Cupcake, Regular and Texas Explained
The cup size is what sets the muffin. Commercial muffin trays come in three stock cup sizes: mini (47 mm), regular (70 mm) and Texas (88 mm) — the figure is the diameter across the top of the cup. Cupcake (60 mm) cups and other sizes are made to order. Each cup size then comes on a tray format that fits your racks and ovens, and the tray format sets how many cups you get.

Tray formats: 16", 18", Euro and Gastronorm
The tray format decides what the tray fits, not the size of the muffin. Australian trade trays come in 16" (406 mm) and 18" (457 mm) widths, Euro 600 × 400 suits European rack systems, and Gastronorm GN1/1 fits combi ovens and catering kitchens. See our guide to 16" vs 18" vs Euro vs Gastronorm tray formats.
